Happy, Happy Holidays

Today I had Thanksgiving dinner - my third in the last 20 or so days. This particular "Thanksgiving" has become one of those funny traditions where my lovely friends from home and I cook up something tasty and celebrate our birthdays, Thanksgiving, Christmas, Hanukkah, Kwanzaa, Bastille Day, Ramadan, Boxing Day, New Years, Valentine's Day and basically every holiday in between. Since we are all scattered across the country at different universities, we can't celebrate them with one another, so the three of us come together in mid-December and do it all at once. This year I made soup! Yeah you could have guessed as much, I know. Actually it was probably more of an awkward mess in a pot that was supposed to be this, but turned into a chili-stew (or a "stili"? Chew? Nevermind).

It was good though. Along with homemade tamales, maple-walnut scones (recipe coming in 2012!), apple crisp with cranberries, a delightful assortment of fruits and veggies, and wassail, it was a meal fit for hungry college students who love to eat a wide variety of random, but equally delicious foods.

In keeping with the spirit of the holidays, I wanted to wish everyone a very happy and safe holiday season. I know many are traveling all over the United States and even the world, and I wish every person a wonderful and exciting journey.

I am headed out of the country for a few weeks and absolutely cannot wait for the experience. You may notice that I won't be posting (since I won't have much access to a kitchen/internet/etc.), but make sure to check back in mid-January when all my postings will be back to normal. In the mean time, make some homemade candy, cook up a pan of mac and cheese, and bake an amazing dessert.
