I love... (Day 11)
In honor of Valentines day, I'm going to write a post a day about all of the things that I love. Check out Day 1, Day 2, Day 3, Day 4, Day 5, Day 6, Day 7, Day 8, Day 9, and Day 10!
Since this is a food blog and I've been talking a lot about everything BUT food, I thought I would give you a list of 11 of some of my favorite recipes (although upon completing the list, I realized there were a lot more than 11). These are in no particular order of deliciousness because they are all pretty amazing.
11. Quinoa and White Bean Burgers
These burgers are wonderful. They remind me a bit of falafel. They are filling and healthy too!
10. Vegan Cornbread (v)
Oh. My. Goodness. I love this cornbread. I made it about three times in the span of a week. It's lightly sweetened, moist, crispy, perfect.
This pie is tart and creamy, perfect for a summer party. And... it's no bake!
8. Chickpea and Avocado Spread (v/gf)
I love this spread. I make it weekly to spread on bread for a quick lunch. It's also great as a dip. It's loaded with healthy fats and protein, yum yum.
7. Super Chunky Granola (v/gf)
This granola is the ultimate breakfast treat. It's chewy, but also crunchy. I love it on yogurt or mixed in with my cereal.
6. Gooey Cookies and Cream Bars
Gooey and amazing. I absolutely loved these bars. The marshmallow creme and cookies and cream chocolate bars seriously took them over the top. I kind of want to make them again because they were just so delicious.
I lovedddd these bars. There is nothing like fresh peaches, and when you combine them with a sweet crust, they are perfection. You need to make these. No. Questions. Asked.
4. Triple Chocolate Oreo Brownies
Wowza. Best brownies I have ever made - hands down. They are dense, fudgy, and chocolatey. You must have milk around for these babies.
3. Hearty Beef and Barley Stew with Root Vegetables
This dish is so ridiculously comforting. I'm not a big beef eater (READ: I never eat beef), but this stew holds a special place in my stomach heart. I love the plump barley, soft veggies, and tender beef. Yummm!
2. Creamy Chicken and Rice with Mushrooms
I love this dish. It is so comforting and healthy. I usually have this insatiable rice craving once a month or so, and this definitely satisfies it. The chicken is tender and flavorful and the rice is super creamy, almost like risotto.
1. Chocolate Peanut Butter Mousse Pie
This pie lives on as one of my favorite birthday desserts ever. It combines my two great loves - Chocolate and Peanut Butter. It is creamy and fluffy, mousse-y and rich. Make this for your birthday and your friend's birthday and your dog's birthday and your little sister's friend's stepmom's brother's cousin's twice-removed birthday.
